i tbsp oil
1 chopped White Sweet Onion
1 bag/ 500g of Stock (i prefer Chicken)
whole chopped Brocolli, inc stalk
5/6 Frozen Spinach Pellets (i think each pellet is a handful, finely chopped. Pellets can be found in the enthnic freezer section at most bit supermarkets)
good handful of chopped Okra (again, i use frozen)
Salt/Pepper/Herbs to your taste
pre cooked Potato, a good handful or two
(if making risotto- 2 cups of aborio risotto rice and enough water to make it swell when simmering)
and any other leftover veg you have lying around
cook the chopped onion in the oil til the onion goes golden, add the stock and the veg, seasoning and leftovers, wait til it all gets soft and comes together. when its done, add the rice , it the soup gets too thick and the rice isnt yet cooked, at more hot water til it gets soft, taste- er, i think thats about it :S
