220g Quinoa (as opposed to Bulgar Wheat)
1 Cucumber
6 Medium Tomatoes
1 Onion or 1 Bunch Spring Onions
Fresh Mint
Bunch Flat Leaf Parsley
1 Clove Garlic
3 tbsp nice Olive Oil
1 Lemon (for the juice)
Salt (brings out the flavour in the Tomatoes)
do what you have to do to cook the Quinoa, and whilst thats happening chop everything really really really small, mix together in a bowl and enjoy
